Before fermentation, the grapes were kept at 4ºC. The grapes were destemmed without crushing. Fermentation was carried out at a controlled temperature of 25ºC.
The duration of post-fermentation maceration depended on the ratio of anthocyanin to tannin. 20% of the young wine underwent malolactic fermentation in new French oak barrels, giving it greater intensity of color, structure and richness, as the tannin polymerization was early and stable, making the wine more durable and providing a spicy flavor and notes. of delicate and subtle smoke.
Aging for 15 months in new French oak (40%) and one year old American oak (60%).

Nose: Intense and complex. Lactic sensations with mineral notes, typical of the Alavesa terroir, with notes of spicy fruit and jam, elegant shades of black pepper and a touch of caramel and cream.
