Intense white wine with a lot of fruit on the nose, such as lime, grapefruit and a little gum. In the mouth, it immediately reveals an accentuated acidity, flint minerality and white pepper, in addition to the aforementioned fruit notes. The structure is full-bodied and slightly creamy, but the mouth remains clean and refreshed thanks to the acidity and very pure expression of this wine.
A real glass of wine that will be excellent with oysters or sushi due to its intense minerality.

Production : Selection of grapes by age of the vine and type of soil. Cold pre-fermentation maceration (8-12º C) for 4-8 hours to ensure full extraction of aromas. Fermentation at controlled temperature (16º C) for 10-15 days. Removed from its own lees at the end of fermentation to achieve the greasiness and persistence characteristic of this wine.
