Each appellation selected by Baron Philippe de Rothschild's team has a unique terroir.
For the Mouton Cadet Heritage: the limestone soils of Entre-Deux-Mers and Côtes de Bordeaux make good wines, the clayey soils of Blayais are the source of more full-bodied wines.
The gravel soils of the Côtes de Bourg and the south of Entre-Deux-Mers bring elegance and freshness to Cabernet.
VINIFICATION
Baron Philippe de Rothschild's winemakers regularly taste the grapes from each selected plot to determine the ideal harvest date. These plots are vinified separately, in order to preserve the diversity and personality of each terroir and each grape variety, thus maintaining the richest palette for the final blend.
Vinification is adapted to each tank to optimize the extraction of tannins and the expression of the fruits that make up the final style of Mouton Cadet.
AGING
Duration : from 20 to 25 months, including 9 months in wood
ASSEMBLY
Merlot : 85% - Aromas of red fruits.
Cabernet Franc : 7% - Flavor and elegance.
Cabernet Sauvignon : 8% - Structure and potency.
Petit Verdot: 1% - Freshness and spices
TASTING NOTES
COLOUR: Intense and brilliant garnet
NOSE: The first nose reveals a nice blend of spices (cinnamon, pepper, vanilla). Notes of very ripe red and black fruits (burlat cherry, blackberry) then appear on the second nose.
MOUTH: The attack is extremely round, expressing ripe red fruits. In the middle of the mouth, the delicious black fruits and spices that were present on the nose return.
The finish is ample and long, thanks to finely chiseled tannins.
