TERROIR: Soil with a large presence of shale, high temperature range, altitude 800m, there are centennial vineyards over one hundred and twenty years old, pre-phylloxera and many on open ground. Presence of indigenous yeasts.
AGEING: 21 months in used barrels
COLOR: Powerful light brown color with reflections between brick and amber.
NOSE: Intense notes of yellow fruits such as quince in jam, as well as pears, apples, and other dried fruits such as chestnuts and walnuts. Hay freshness. Light earthy notes, resins, fine and special dry woods. Ethereal and complex.
MOUTH: The notes of dried fruits are impactful, intense and persistent, with a very good body. Dry, with firm acidity. Soft. Good finish, with a powerful aftertaste reminiscent of old white fortified wines, resins, cinnamon, cloves, and candied chestnuts.
Harmonization / Pairings
It is an orange wine , complex and delicate. Its versatility allows it to pair well with fresh and wild mushrooms, as well as succulent dishes (feijoadas and cassoulets), cod and game birds. It goes well with vegetarian dishes. Some daring connoisseurs recommend this wine for a peach pie or a Tatin tart.
