Smooth, unctuous and generous, with a specific acidity for the big ones, Champagne Boërl & Kroff is composed of a palette of rich and complex flavors and above all it offers an extraordinary mouth length.
A bubble so fine you almost forget for a moment that you might be tasting one of the greatest Champagne wines of all time.
A wine capable of involving the mouth and the mind and that lasts a long, long time.
An unclassifiable wine...
THE ASSEMBLY :
Pinot Noir 90%
Chardonnay 7%
Pinot Meunier 3%
VINIFICATION :
Coming exclusively from the first press, the base must flow by gravity and therefore without pumping. This technique, to which we are particularly attached for the production of Boërl & Kroff, allows for a minimal addition of sulfur (three times less than normal). This very “natural” type of vinification gives the wine, made from Pinot, a characteristic copper tone, commonly found in the last century.
Total acidity 5.2 g / l HSO4
Residual sugar content before dosing 3 g/l. Dosage 5g / l.
Dosage of liquor aged in oak barrels.
THE TASTING : By Gérard Basset, MS.MW, Best Sommelier in the World 2010
Deep gold with bronze highlights, surprisingly, but there is a beautiful effervescence in the glass with many fine bubbles rising rapidly in the glass.
Powerful and magnificent nose with enchanting notes of beeswax, honey bread and linden.
Concentrated in the mouth with superb intensity and a finish of candied lemon zest that stays exceptionally long in the mouth.
This is really a sensational vintage, giving a lot of pleasure now, but still with great aging potential.
