elaboration
After destemming and incubation, the wine is made in open vats with a capacity of 700 liters. The wine undergoes a controlled fermentation at 22ºC, with manual bâtonnage three times a day. Post-fermentation maceration for 5 days, in order to pamper and care for the fruity expression of the grape with one punch a day.
Thus was born Valdelacierva Garnacha. The finished wine passes into new French oak barrels, with a capacity of 500 liters, where the malolactic is carried out and a moderate aging of 7 months is carried out.
