Vinification
Manual harvesting, gentle crushing of the destemmed grapes, skin maceration for 15/18 hours at 10°C.
Fermentation
In stainless steel vats at a controlled temperature of 15°.
Re-fermentation in an autoclave using the Charmat method at a controlled temperature with 3 months on the lees.
