The Ermitage l'Ermite 2017 is equally amazing, but gives off a completely different expression from the Hermitage. In a way, it combines the reserved way of the Pavillon with the generosity of the Méal, which makes for a wine that I can only describe as perfect.
The pristine cassis is of extraordinary purity, united by complex notes of crushed stone, salty liquorice and minor notes of fine-grained oak.
It is full-bodied, concentrated and velvety, with tons of smooth but ripe tannins and a finish that lasts for a few minutes.

Harvest : Very late manual harvest to obtain great natural grades.
Soil : Soils located at the top of the Hermitage hill, around the chapel, in a place called l´Ermite. 80 years old vines on very poor granite soils.
Vinification : The harvest, 100% destemmed, is vinified in concrete tanks. Maceration lasts about 4 weeks to obtain silky, stable tannins for long-term aging. The temperature does not exceed 32°C to promote excellent extraction. To make this wine, only the drop of wine is used.
Aging : After the "écoulage", the wine is immediately placed in new barrels and in barrels aged one year for aging for about 8 to 20 months.
Variety: 100% Syrah.

TASTING NOTES:
Color : very dark grenat almost black.
Nose : black fruits with hints of spice and ink.
Mouth : very powerful and at the same time velvety tannins, smoky and peppery notes, magnificently expresses the Syrah in this granitic territory.
Depending on the harvest, this wine can be kept from 30 to 60 years, even from 50 to 75 years.
Side dishes: Beef rib with chanterelles. Roasted deer with its juice. Wild boar stew, all cheeses.
